Hollandaise Sauce

Ingredients

  • 3/4 cup milk
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 pinch salt
  • 1 pinch pepper
  • 1 tablespoon lemon juice
  • 1 egg yolk

Instructions

Melt butter in a pot.

Add flour and seasonings.

Gradually add milk and stir over heat until sauce thickens and then for 4 - 5 minutes longer.

Stir in beaten egg yolk and drop by drop, the lemon juice.

Reheat but do not boil.
