Ziggy's Carrot Cake

Cooking time, 1 1/2-2 hours.

Ingredients

  • 1 227g tin crushed pineapple
  • 3 beaten eggs
  • 3/4 cup oil
  • 1 cup brown sugar
  • 1 cup raw sugar
  • 2 tsp vanilla
  • 2 cups wholemeal flour
  • 1/2 tsp salt
  • 2 tsp soda
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1/4 cup sour milk
  • 3 cups grated carrot
  • 1 cup coconut
  • Icing
  • 50 gms butter
  • 1/4 cup cream cheese
  • 1/4 tsp vanilla
  • 1 tsp orange rind
  • 1 cup icing sugar
  • 1-2 tsp orange juice

Instructions

Beat eggs, oil, sugars and vanilla together.
Add flour, salt, soda and spices. Mix lightly.
Add milk, carrots, coconut and pineapple.
Mix well and pour into a large lined tin.
Bake 180 degrees 1 1/2-2 hours until firm-ish! (do not overcook).

Cool and ice.
