Bacon-wrapped Chicken

Preparation time, 25 mins. Cooking time, 40 mins.

Rip the bread into crumbs, add chopped onion, cranberries and herbs. Mix in the egg, chicken stock and salt and pepper to form a wet stuffing mixture. Slice 2/3 through each chicken breast and fill the opening with stuffing. Wrap a piece of bacon around the chicken and secure in place with a toothpick if necessary. Place in a baking dish and drizzle lightly with olive oil. Bake at 180C for 40 mins or until cooked.
