Blondies

Preparation time, 15 mins. Cooking time, 25 mins.

Ingredients Yields 8 inch square pan

  • 1 cup light brown sugar
  • 114 grams butter
  • 1 egg
  • 1 teaspoon vanilla essence
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup white chocolate chips or walnut pieces

Instructions

Preheat the oven to 175C. Line an 8 inch square tin with baking paper.

In a large saucepan, melt the butter over a low heat. Remove from heat and stir in the brown sugar. Add egg and vanilla essence and mix well. Fold in the flour and salt until just combined. Stir in chocolate chips or nuts if you are using these. Pour the batter into the prepared tin and smooth the top with a spoon. Bake for 20 - 25 minutes or until set in the middle. Cool on a rack before slicing.
