Ingredients Yields One large pot
- 25 grams butter
- 1 chopped onion
- 2 cloves garlic
- 1/2 a pumpkin, chopped and peeled
- 3 cups water
- 1 cube chicken stock
- 1 teaspoon curry powder
- 1/2 teaspoon cinnamon
- 2 teaspoons sugar
- 3 medium potatoes, chopped and peeled
- 1/2 teaspoon salt
Chop onions and garlic. Melt butter and cook onions and garlic in a large pot until soft but not browned. Prepare pumpkin and potatoes and add to onion with water, spices, stock and sugar. Cook until pumpkin and potato is just soft in the center when pierced with a knife.
Puree the mixture and add just enough milk or water to thin to the desired consistency.
